Fresh Salt at Saybrook Point Introduces New Summer Menu

The Fresh Salt restaurant at Saybrook Point has introduced a new summer menu that features seasonal dishes inspired by the bountiful harvests of local farmers and fisheries. Named Best Upscale Dining in Connecticut by the state’s restaurant industry association, Fresh Salt works closely with its local farmers and artisans to ensure the highest quality of locally grown ingredients from land and sea go into its creative delights.  Gambardella Seafood of Stonington provides the local catch-of-the-day with fresh day boats of clams, oysters, mussels, shrimp, tuna, cod, swordfish, and salmon.

At Fresh Salt, guests will savor fresh, seasonal and local cuisine served in Old Saybrook’s most spectacular setting – the spot where the fresh waters of the Connecticut River meet the salt of Long Island Sound. It’s a treasured and historic place, rich in life, and the restaurant reflects that lively diversity. Chef d’ Cuisine Gese Rodriguez offers a simple yet high quality approach to transforming the fresh seasonal ingredients of Connecticut into beautifully inspired dishes. The new summer menu features the bounty of the season through unique pasta dishes such as “Beggar’s Purse,” which is fresh pasta filled with pear, Taleggio, Robiola, Ricotta, English peas, asparagus, and cherry tomatoes in a white wine sauce; and Cavatappi Primavera with broccoli, asparagus, cherry tomato, oyster mushroom, yellow pepper, and olive oil in a white wine sauce. In addition, guests will enjoy Fresh Salt’s fresh seafood and day boats including Pan-roasted All-Natural Black Pearl Salmon served with Roasted Cauliflower, Local-grilled Peach, Couscous, Passion Fruit Beurre Blanc, and Lemon Sea Salt ($29.95), Pan-Seared Cod served with Mushroom Risotto, Spinach
Cherry Tomatoes Blistered in White Port ($28.95), and Idaho Trout from the Snake River Canyon served with Crushed Almonds, White Wine-Butter Sauce Sweet Pea and Corn Risotto.

From the grill and the oven, guests will experience Fresh Salt’s Free Range All-Natural Half Chicken served with Edamame-Mashed Potato, and Yellow Beans in a Rosemary-Limoncello Sauce ($26.95), as well as the Grilled French-Cut Pork Chop served with Roasted Peruvian-Purple Potato, Grilled Corn, Passion Fruit-Barbecue Sauce and Smoked Hickory Sea Salt ($28.95)

And classic New England dishes include Soft Shell Belly Clams, Fried Oysters and Seaside Tempura Platter with Golden Brown Scallops, Oysters, Calamari, Zucchini and Peppers served with House Kettle Chips, Cole Slaw, and Chipotle-Avocado Tartar Sauce ($21.95).
