Veggie and Ground Turkey Zucchini Boats

Tonight’s dinner was delicious! I made Zucchini Boats stuffed with bell peppers, onion and ground turkey! It was so easy to make!

Cut your zucchini in half the long way and hollow it out. Put enough water to cover the bottom of a pan, and place your zucchini’s in the pan. Cook in the oven for 20 minutes at 350 degrees.

While those are cooking, chop up 2 bell peppers and 1 onion and cook them in a pan with some olive oil. Take 1lb ground turkey and a 6oz can of tomato paste put it in the same pan as the onion and peppers. Mix it all together with 3 TBSP of Healthy Solutions Spice Blends Italian Meatballs Seasoning! Cook until on medium heat until the ground turkey is fully cooked and the onion and peppers are soft.

Once my Zucchini was cooked I emptied the water on the pan and put the ground turkey mixture into each zucchini. I topped it off with some Parmesan and mozzarella cheese and put it in the oven on broil until the cheese was melted.

I had some tomato sauce in the fridge that I needed to use up so I warmed it up and out some on a plate. I then placed my Zucchini boats on the plate and presto dinner was made!

 

 

You could also put the turkey mixture into a a hollowed out bell pepper and put it in the oven with cheese! Yum!
